While we will do our best to accommodate last minute orders, unfortunately we cannot guarantee all menu items and delivery times will be available.

Dietary Requirements and Custom Menus

We love to assist with any custom menu items, where possible. Please contact us to discuss your request.

We offer a range of menu options to suit different allergies and diet preferences. We pack all special diet items in separate packages with clear labelling to limit the risk of cross contamination.

Please feel free to contact us if you would like some guidance when ordering for dietary requirements.

While will take all care to provide special meals to meet all dietary requirements. We are unable to guarantee that any meal will be 100% free of all traces of nuts, dairy, gluten, egg or egg products, seafood or other products that may produce allergic reactions in some people.

To manage extreme allergies, special arrangements must be made prior to placing your order.

Food Safety Information

Storage

All food items are delivered in recyclable cardboard catering trays ready to serve or disposable aluminum trays ready to heat and serve.

All food items should be stored in a refrigerator below 5⁰C upon delivery until ready to serve or served upon delivery.

We recommend serving delivered catering items as soon as possible from the delivery time and on the day of delivery to ensure items are as fresh as possible.

Heating

Heating instructions are provided with items, all domestic ovens are different, and we cannot guarantee exact instructions. Please allow additional time to reheat your items and ensure they reach an internal temperature of 75⁰C prior to serving.

Food items should be removed from cold storage then reheated to an internal temperature of 75⁰C within 1.5hrs.

The internal temperature should be measured by inserting a probe thermometer into the slowest heating part of the food item and waiting for the temperature reading to stabilise.

Food items that have been heated cannot be cooled and reheated again.

Serving

If food items are not refrigerated upon delivery then they should be consumed within 1.5hrs of the delivery time and all leftover food items should be discarded.

Food items served cold should be consumed within 1.5hrs of removing from the refrigerator and food items that have been reheated should be consumed within 1.5hrs of reaching 75⁰C.

Client Acknowledgment

By placing a delivered catering order with William Wallace Group, the client acknowledges that the safety of the food items becomes the responsibility of the client upon acceptance of the delivery or collection.

As William Wallace Group does not oversee the storage, handling and serving of food items from the point of delivery or collection, the client accepts that no further claim to the safety of the food items can be made in the event the client improperly stores, handles or serves the food items.
